Cheer up a cold, rainy day at home with a mug of our favourite hot chocolate! Sure to warm you through, this hot chocolate recipe is simple and can easily be made from what you have in the fridge and pantry. To get started, you will need...
2 cups full cream milk
1 cup pouring cream
80g good quality dark chocolate chopped
1 cinnamon stick
1/2 tsp ground ginger
1-2 cardamom pods
First, mix the milk and cream together in a heavy based saucepan, and place over a low heat. Add the cinnamon stick and cardamom pods. Stir every 15-30 seconds to keep the milk mixture from sticking to the pan; and be careful to only heat the milk gently. Do not allow it to simmer or boil.
Once the milk mixture is warm, add the chopped dark chocolate and ground ginger. Stir with a whisk until the chocolate starts to melt into the milk.
Continue to stir the mixture over a low heat until all the chocolate has melted and the mixture is a consistent colour. Remove the cinnamon stick and cardamom pods before serving. Makes 2 generous mugs.
Tip: for something truly indulgent, try adding a little whipped cream on top!
